I don’t know about you, but I don’t go to Olive Garden. It’s just not a restaurant that I frequent. I’ve heard that they do have a pretty amazing zuppa toscana, and I’m told that this recipe is a close copycat. You must make some of this potato sausage and kale soup to enjoy as a warm-you-up dinner on a chilly day!

🛒 Ingredients Needed:

  • sweet Italian sausage
  • onion
  • chicken bouillon granules
  • garlic powder
  • freshly ground black pepper
  • red potatoes
  • fresh kale
  • 2% milk
  • heavy whipping cream
  • cornstarch
  • cold water

✏️ How to make Potato Sausage and Kale Soup:

  1. In a large saucepan, cook the sausage and onion over medium heat for 4 to 6 minutes or until the sausage is no longer pink and the onion is tender, breaking up the sausage into crumbles; drain.
  2. Stir in the seasonings. Add the potatoes, kale, milk and cream; bring to a boil. Reduce the heat; simmer, covered, for 10 to 15 minutes or until the potatoes are tender.
  3. In a small bowl, mix the cornstarch and water until smooth; stir into the soup. Return to a boil, stirring constantly; cook and stir for 1 to 2 minutes or until thickened.

➡️ Tips and Substitutions:

  • Use chicken sausage in place of sweet Italian sausage, if you’d like.
  • Fresh spinach may be substituted for fresh kale.
  • If you’d like to lighten things up, use half and half or whole milk. The soup won’t be as thick.

✔️ Make Ahead and Storage:

You can absolutely make this soup ahead and warm it up to eat later. As the soup sits, it may thicken up a bit, so it’s best to have some chicken broth on hand in case you need to thin it out some. Keep leftovers stored in a covered container in the refrigerator for 3 to 4 days.
