This is a simple to prepare recipe for Amaretto Chicken that is very delicious and is perfect for a special dinner.

Someone gave me this recipe many, many years ago. It’s one that I used to make for dates when I was in college. Everyone loved it. My cousin made it for her family, and they loved it too. So I guess you could say that this amaretto chicken is a good, repeater chicken recipe!

🛒 Ingredients Needed:

  • boneless chicken breasts
  • salt and pepper
  • curry powder
  • all purpose flour
  • salted butter
  • sliced fresh mushrooms
  • garlic
  • Amaretto liqueur
  • freshly squeezed lime juice
  • low-sodium chicken broth
  • steamed rice, for serving (optional)

✏️ How to Make Amaretto Chicken:

  1. Sprinkle the chicken breasts with salt, pepper and curry powder and rub in well. Coat with flour (reserving the rest of the flour for later use).
  2. In a large skillet, melt the butter and brown the chicken in the butter on all sides. Add the mushrooms, garlic, lime juice, and amaretto. Stir well and cook for 1 minute.
  3. In a small bowl, whisk the chicken broth into the reserved flour and add to the chicken mixture. Cover the skillet, reduce the heat to low and simmer for about 30 minutes.

➡️ Tips and Substitutions:

  • Since the recipe has an “almond theme” to it using an almond liqueur, a sprinkle of toasted sliced almonds served on top happens to be fabulous.
  • You can use chicken thighs or chicken tenders in this recipe in place of chicken breasts.

Can you leave the Amaretto out of the recipe?

If you don’t have amaretto (or if you don’t like to use alcohol in cooking), there is a solution. This recipe calls for using 3 tablespoons of amaretto. Since amaretto is an almond-flavored liqueur, you can substitute about 2 teaspoons of almond extract for the amaretto.
